Bake it naked

A naked cake is a delicious dessert that lacks the traditional frosting or marzipan edges. Distinct, visible layers expose the beautiful textures and colours of the flavours inside. Bake it with steam for taller layers and a fluffier, more professional result.

Ingredients (makes around 10-12 pieces)

Vanilla cardamom cake:
75 g butter (plus extra for greasing the pan)
1.5 dl milk
225 g egg (about 4–5 eggs)
340 g caster sugar
1 teaspoon vanilla powder
1 tablespoon ground cardamom 
270 g all-purpose flour (plus extra for dusting the pan)
2 teaspoons baking powder
1 pinch of salt

Butter cream frosting:
360 g caster sugar
1.5 dl water
80 g egg yolks (about 4 yolks)
100 g egg (about 2 eggs)
1 teaspoon vanilla powder
500 g butter, softened

Caramel sauce:
225 g caster sugar
1.5 dl full-fat cream 
100 g butter, cold and cubed
1 pinch of sea salt
